   Easy Chicken Enchiladas

 

 

Recipe

Ingredients:

1-3 cups cooked chicken, cut up

1/2 cup-1 cup cream cheese, or sour cream, or cream of chicken soup

2-4 cups shredded cheese

1 can or 1 cup salsa, mexican tomatoes (like Rotell), taco sauce, or lesser amount of green chillies, or none of the above

Optional: taco seasoning, corn, black beans, slightly cooked green peppers and/or onions, etc.

Flour tortillas

Sauce and cheese for on the top (I used salsa, but a can of mexican tomatoes, can of plain chopped tomatoes, taco sauce, white queso sauce, etc. can work)

 

 

Directions:

Mix. Fill tortillas. Roll. Place in greased pan. Top with sauce and cheese. Bake 350-375 for 30-40 minutes.

 

Don't get bogged down because the recipe is vague.  That is the beauty of it!  Use what you have and what you like.  Be creative. 

 

 

 

 

 

Welcome Back!

 Today we are making Chicken Enchiladas.  This recipe is one you can do without looking.  It is also one that has as many variations as what you have available in your refrigerator or pantry.
This time I did use a tripod to film.  Yeah! No shaking! 

It runs a little over 10 minutes, but this recipe is one that is worth learning and trying.

Sorry this is shaky at times.  I promise to use a tripod next time!  (A 9 year old videographer gets tired!)

 Recipe for Simple Pizza Crust from Scratch (One of the Best I've Ever Tried!)

 

Ingredients:

1 cup very, warm water

1 tablespoon or packet of yeast

1/4 cup sugar or less (1/2 cup turned out to be too much!)

1 teaspoon salt

1/4 cup vegetable oil

3 cups flour (maybe 1/2-3/4 more, but not too much. It will make the pizza dry and hard.)

 

Directions:

 

1. Dissolve yeast in warm water.  Add sugar and salt.

2. Add oil.

3. Add 3 cups flour.

4. Knead with dough hook on medium speed in mixer for 8 minutes or get a kid to knead it five minutes. Preheat oven 400 degrees. Get your toppings ready.

5. If dough is sticky, add a little more flour just to make it manageable.

6. Shape and push into 2 crusts on greased (with olive oil or cooking spray) cookie sheet.

7. Top with favorite pizza toppings.  Bake 10-15 minutes.  (Sorry for the time spread, but this depends on number of toppings, thickness of crust, and desired browness!)
